Blue Front Café: Candied Ginger Shortbread
- 2 sticks unsalted butter (softened)
- ½ cup firmly packed light brown sugar
- ½ tsp. ground ginger
- 2 cups all-purpose flour
- ¼ tsp. salt
- ¾ cup firmly chopped candied ginger
- Powdered sugar for sprinkling cookies
Cream together the butter, brown sugar, and ground ginger, until the mixture is light and fluffy.
Add flour and salt.
Mix until just combined, and then add candied ginger.
Roll dough into logs in plastic wrap.
Chill until very firm.
Slice the logs (approximated ¼ inch thick)
Arrange 2-inches apart on baking sheets.
Bake in the middle of a preheated 300 degree oven for approximately 20 minutes, but most importantly, until golden brown.
Let the cookies completely cool, and sprinkle them with powdered sugar (sifted).
The cookies will keep in an airtight container for up to a week.
Additional Note: You can also roll out dough to ¼ inch thickness an make cut-out cookies.
