Bay Shore Inn: Uncle Jack’s Blueberry Muffins
- 1 ¾ cups all purpose flour
- ¼ cup sugar
- 2 ½ tsp. baking powder
- ¾ tsp. salt
- 1 egg, well beaten
- ¾ cup milk
- 1/3 cup cooking oil
- ¾ to 1 cup fresh blueberries
- 2 Tbsp. sugar
- 1 tsp. fresh grated lemon peel
Stir the first four ingredients together thoroughly, and make well in center.
Combine egg, milk, and oil in separate bowl. Add to the center of the dry mixture.
Stir just until moistened. Set aside.
Combine fresh blueberries, 2 Tbsp. sugar, and 1 tsp. freshly grated lemon peel. Fold into batter.
Fill well greased muffin pans or paper baking cup lined muffin pans 2/3 full.
Bake at 400° for 20-25 minutes.
While muffins are still warm, they may be dipped in melted butter and then sugar.
